Changes I'd make:
I'd shy away from the 480s because while they're more powerful than comparable ATI offerings, they use a TON of power, release a TON of heat, and are loud as fuck. I'd take 3 5870s over them; it's not like you'll actually need that power for anything, and by the time it's useful there will be a new series of graphics card with new features that you'll want.
For the monitors, I'd pass and take a couple NEC EA231WMIs instead. They've got the same resolution (though they're a bit smaller) but there's no comparison of the quality. The Samsungs are TN panels, which are notorious for their poor color reproduction and viewing angles. On the other hand, for about the same price, the NECs are IPS panels, with much better color reproduction and viewing angles. The refresh rate may be a bit lower, but it shouldn't be too noticeable.
DON'T TAKE THE SSDS!!!!! Those are bad SSDs. Period. If you want to go for the solid state, take an OCZ Agility 2 60GB SSD for about the same price. You'll be much happier. Also, you don't seem to have any HDDs, and 60GB isn't going to be nearly enough capacity for you. I'd grab a WD Caviar Black 1TB or (in my opinion, preferably) a Spinpoint F3 1TB, and maybe a second for RAID 1 just for the sake of security. Both are fast effing drives, and you'll be quite happy with either.
There is no reason you need to spend that much on RAM. Take a 6GB set for around $150 and call it good. 1333, maybe 1600MHz, CAS 9 or 8, that's all you need. There are no scenarios in which you will need more than 6GB of RAM (and few come to mind when you'll need more than 4 unless you multitask like a beast).
If you hadn't already bought it I'd have recommended a different PSU (though that one is good), and I can't imagine why you chose to cram this $3000 rig (if you go for 3 freaking GPUs) in a $100 mid-tower. I'd have taken something like a HAF 932, ATCS 840, even a Storm Sniper, and hell, at this point, I wouldn't put you past a Corsair 800D.
